Well... It's weird but I tried to come back to Spanish and the problem comeback to... So I changed to English again and work perfectly.

Yes!

I tried French and Deutsch any of them work.
Only English.

ok. i will try some other languages here as well. but i cannot imagine this being the only problem since many other users must have axoloti installed on a non english osx

I'm afraid I can't find this option... I'm not running macOs Catalina I'm running MacOs high Sierra 10.13

I can't not find this language per app thing.
Only a Main language an another one for the keyboard.
