did anybody an audio to midi converter ? basically fft to polyphonic midi ?

fft is not going to work well with low latency. as far as i know, nobody did a threaded version, as it seems to be the consensus that it would eat up too much resources...

Any way of converting audio volume to MIDI values?

yes sure, the easiest would be volume to a cc message. just use an envelope follower and feed that to a midi cc out. you might have to scale the values.
